The first release from Sheestown Farm as part of Waterford's Origin Series. Sheestown, known locally as ‘the place of the lush grass', is a rolling, lowland terroir of well drained loamy soil where Phillip O'Brien has farmed the land for half a century. This expressed has been matured in a mixture of first-fill American oak, virgin American oak and premium French oak.
